You want us finding new attack vectors in VPNs and mitigating them. You don't really want us managing email servers. If we can avoid managing a component and its security by outsourcing it to a provider that satisfies our requirements that means more of our time can be spent on the core. We've considered a few alternatives, as well as running the email server etc ourselves, but in the end we've kept using GMail. So if we were to go with a provider that didn't mine emails for marketing purposes, and had great security and internal safeguards, it's not clear they would provide anything against the other threats. It's certainly annoying that Google analyzes our emails for marketing though. They're also decent at protecting our data from breaches by hackers. Google has internal safeguards to protect our email from their employees, unlike smaller providers. Three-letter agencies probably have access to most unencrypted email regardless of the country your email server is in (NSA dragnet and so on), and there's always subpoenas if you can convince local LEOs. In this case emails and their metadata are the assets, and threat agents are LEOs, three-letter agencies, the provider and its employees, and hackers.
